60 ml I 2 oz Blended Scotch
20 ml I 2/3 oz Lemon Juice
10 ml I 1/3 oz Ginger Syrup
10 ml I 1/3 oz Honey Syrup
10 ml I 1/3 oz Islay Scotch
Method: Shaken
Garnish: Candied ginger

The story of the Pencillin Cocktail
This variation on a whiskey sour has become one of the neo-cocktail classics of all time. It was created around 2005 by Sam Ross in New York. The flavors are rich and complex, but smooth and easy to enjoy despite the Islay whisky. We already know bartender Sam Ross as the inventor of the equally delicious Paper Plane cocktail.
Double Scotch
Scotch is one of the biggest spirits themes in the bar world. The selection is huge and no one will probably ever manage to try all the varieties. Your Penicillin cocktail can be just as varied as the range on offer. I often use Famous Grouse in its standard quality for the blended Scotch. This is slightly spicy with fine oak notes and hints of dried fruit. I think it’s great. Other bottles would be the Monkeys Shoulder or the Johnny Blonde.
Smoky Scotch in the Penicillin Cocktail
It’s just a small float on the finished drink. But that’s what makes it special. As a result, we have the wonderful smoky smell in our nostrils even before we drink it and with every sip we taste the Scottish peat fields on the island of Islay.
So which Islay to use? Actually, anything that gives you a good amount of peat. Laphroaig 10 Years is always on my shelf and is therefore my “to go” peaty Scotch. Laphroaig Quarter Cask, Ardbeg Ten or Bowmore 12 – anything goes.
